Before Steamboys existed, one of our founders was broke.

Not "eating rice for a week" broke. Actually broke. The kind where you count coins and hope it adds up to a real meal.

Every weekend, he'd walk San Francisco's Chinatown looking for something warm. Something filling. Something that wouldn't leave him hungry an hour later.

One restaurant became his lifeline.

For a few bucks, he could get dumplings, chicken, and a bowl of scallion oil noodles that hit different than anything else on that street.

Fragrant scallion oil. Knife-cut noodles. A savory sauce with just enough personality to make it unforgettable.

He ate it every single weekend.
