A STORY WORTH TELLING · BEEF NOODLE SOUP

We thought we were going to be known for bao and dumplings.
 
That was the whole reason we flew across the world.

We spent weeks traveling through China, hunting down comfort food recipes. Stopping at stalls. Learning from strangers.

Then we walked into a small market stall.

The owner was an old man.

His menu had exactly one item: beef noodle soup.

We ordered it as an afterthought.

One bite in, we knew.  

This was something we couldn't live without.

We begged him to teach us. He said no. We begged again. He said no again. Eventually, he sighed and told us to come back at 4 AM the next morning.

We showed up. He showed us how he did it. How he got the beef so tender it fell apart. How his broth had that depth you could fall in and get lost in it.

We came home thinking we'd built a bao and dumpling brand. Turns out, our beef noodle soup would end up being our top seller. Every location. Every day.

The old man in that market probably has no idea his recipe is on menus in Nashville,Tennessee and Madison, Alabama right now.

But it is.

And every bowl we serve is a thank you.
